Peppermint Cookies

Materials
- sugar (0.75 cups)
- sugar (0.25 cups)
- butter, unsalted and softened (1 stick)
- egg (1)
- vanilla extract (1 tsp)
- peppermint extract (1/8 tsp)
- all purpose flour (1 1/3 cups)
- cream of tartar (1 tsp)
- baking soda (0.5 tsp)
- table salt (0.5 tsp)
- candy canes or peppermints, crushed (0.5 cups)
Procedure

Pre-heat oven to 350F

Combine larger portion of sugar with butter, egg, vanilla extract, and peppermint extract in a large mixing bowl. Beat at medium speed while scraping the bowl often until mixture reaches a creamy, even consistency.

Add flour, cream of tartar, baking soda, and salt. Beat at low speed until thoroughly combined. Stir in half the crushed peppermint into the mixture.

In a separate bowl, combine the rest of the crushed peppermint with the smaller portion of sugar.

Shape the dough into 3/4 inch balls. Roll each ball in the sugar-peppermint mixture and place 2 inches apart on baking sheets.

Bake for 8-10 minutes or until the edges are slightly browned. Allow to cool completely.
