Peppermint Cookies

Materials

  • sugar (0.75 cups)
  • sugar (0.25 cups)
  • butter, unsalted and softened (1 stick)
  • egg (1)
  • vanilla extract (1 tsp)
  • peppermint extract (1/8 tsp)
  • all purpose flour (1 1/3 cups)
  • cream of tartar (1 tsp)
  • baking soda (0.5 tsp)
  • table salt (0.5 tsp)
  • candy canes or peppermints, crushed (0.5 cups)

Procedure

  1. Pre-heat oven to 350F

  2. Combine larger portion of sugar with butter, egg, vanilla extract, and peppermint extract in a large mixing bowl. Beat at medium speed while scraping the bowl often until mixture reaches a creamy, even consistency.

  3. Add flour, cream of tartar, baking soda, and salt. Beat at low speed until thoroughly combined. Stir in half the crushed peppermint into the mixture.

  4. In a separate bowl, combine the rest of the crushed peppermint with the smaller portion of sugar.

  5. Shape the dough into 3/4 inch balls. Roll each ball in the sugar-peppermint mixture and place 2 inches apart on baking sheets.

  6. Bake for 8-10 minutes or until the edges are slightly browned. Allow to cool completely.
